PRODUCER PROFILE

Cape Mentelle was one of the original five wineries founded in Western Australia’s Margaret River in 1970 by David Hohnen. Cape Mentelle is recognised not only for its commitment to quality, but for its adherence to organic viticulture. The team at Cape Mentelle share a love for the land and a deep commitment to sustainability. Cape Mentelle is also a certified member of Sustainable Winegrowing Australia. Their flagship Cabernet Sauvignon, sourced primarily from the original Wallcliffe Vineyard is now widely regarded as one of Australia’s leading Cabernets.

VINEYARD & VINIFICATION

Chardonnay is picked in the cool hours of the night to preserve fruit purity and aroma. The fruit is gently pressed before being sent to tank for fermentation on fine lees, with a portion maturing in oak to ensure we have a complete wine which is a representation of Margaret River. Both new and used French HHD’s and French oak tank staves, 11% of which is new oak.
