PRACTICES VINEYARD & VINIFICATION

Vineyard practices focus on “heroic viticulture” on steep, sun-drenched hillsides, requiring manual labor for all vineyard management and harvesting. Grapes are gently pressed, followed by temperature-controlled fermentation in stainless steel tanks to preserve fresh, vibrant aromas. The wine undergoes a second fermentation in a pressurised tank using the Charmat method to achieve its delicate sparkle.
