TASTING NOTES
A dry, fruit-driven sparkling wine with a crisp acidity and a good backbone. Excellent depth of flavour with tantalising acidity and length. This wine shows balance and gives way to citrus and toast flavours.

The Lyme Bay range is broad, from entry point bottles to single vineyard wines which represent the highest quality of fruit within a given vintage. They have trusted growers from Herefordshire to Essex which gives them the climactic variety to pick the right fruit for each cuvée.
VINEYARD & VINIFICATION
Grapes sourced from Devon, Essex & Kent. Only the finest press cuts are used, and after an extended cold settle, the base wine is fermented at cool temperatures to maintain the grapes freshness. Attention is made at blending along with reserve wines, to ensure the consistent vibrant quality that defines this wine. Deliberately limited to 9-12 months ageing to retain the fresh style, in 100% stainless steel vessels.
