TASTING NOTES
The nose is expressive and inviting, show casing vibrant aromas of ripe berries complemented by elegant notes of gentle oak and toffee, with subtle hints of balsamic adding depth and complexity. These are continued on the palate, with vibrant red and black fruit, combined with the secondary notes of Vanilla and coffee.
PRODUCER PROFILE
Believing deeply in the potential of their family vineyard to make top-quality wines, the Pérez Pascuas siblings founded their own winery in 1980. Situated on a hill just outside the village of Pedrosa del Duero, the winery’s high altitude (over 850m) creates a cooler microclimate and a longer growing season. The estate fully converted to organic viticulture and practices in 2023. In line with these vineyard changes, the winemaking is also evolving, with a lovely energy and freshness now balancing the wine’s richness.
VINEYARD & VINIFICATION
The grapes are handpicked from clay-limestone soils to ensure quality and expression of terroir. Vinification involves destemming and gentle pressing, followed by a 15-day maceration on the skins to extract colour andstructure. Fermentation takes place in temperature-controlled stainless steel vats using activated dried yeast. The wine is then aged for 18 months in a combination of French and American oak casks, adding depth and complexity, before spending a further 6 months maturing in the bottle prior to release.
