PRODUCER PROFILE
Domaine de Gry-Sablon’s winemaker, Dominique Morel, produces wines from 12 different appellations across 18 hectares in Beaujolais. He works his vineyards sustainably and almost all work is done by hand. In the cellar heuses natural yeast and temperature controlled fermentation in stainless steel, seeking to preserve the pure character of his fruit. His wines are vibrant and fruit driven, with good colour and concentration on the palate. The Beaujolais Villages is ripe and fruity, with raspberry and strawberry flavours and hints of white pepper. The Fleurieis a gentle and aromatic wine, with ripe red cherry fruit and a silky finish.
VINEYARD & VINIFICATION
The hand-picked grapes are given the best of traditional Beaujolais vinification using 70% whole bunches and 30% de-stalked grapes. Maceration lasts 7 to 8 days. Pumping over and punching down at the end of maceration. Temperature regulation of our stainless steel vats means that we can generally vinify without the use of sulfite. The wine is matured on fine lees for 5 to 6 months.
