TASTING NOTES

This wine showcases a deep red, purple hue. With a vibrant, aromatic nose which unfolds with enticing notes of liquorice and blackcurrant. On the palate, it offers a beautifully structured volume with expressive flavours of redfruits, blackberries and a touch of black olive. The well-integrated tannins add depth, while subtle hints of pepper provide a lingering, complex finish.

PRODUCER PROFILE

The vineyards of Château de Lascaux have been in the same family for fourteen generations. Jean-BenoîtCavalier officially established the Domaine in 1984, when he took over the property. The stony soils lend elegance and freshness to the wines.The  garrigue with notes of laurel, thyme and rosemary is reflected in the aromatics of the wines. They gained their organic certification in 2009 and their biodynamic conversion was approved in 2018. The Château de Lascaux wines are generous, friendly wines of superb quality and excellent value for their price category.

PRACTICES VINEYARD & VINIFICATION

The vines are planted on a soil resulting from the breakdown of calcareous rocks of the quaternary period(Jurassic limestone, harder and older). Harvest by hand or by machine according to the plots. The vineyard has been certified in organic farming since 2009 and in biodynamic farming since 2018. The grapes are entirely destemmed. Natural yeasts are used as well as traditional winemaking process with 3-4 weeks fermentation and maceration in concrete tanks. Perfect temperature control during the fermentation, then a slow rise intemperatures during the maceration. Aged for 10 months minimum.
